There's loads of fantastic content online to help you become a better cook, but nothing comes close to learning in a real kitchen, with hands-on guidance. We offer 1:1 and small group sessions. You can come to Charcôterie's NE30 kitchen (10 minute walk from Tynemouth metro station) or we will come to your place. DBS certified chef tutor.

From cooking basics to advanced gastronomic techniques, one-pot wonders to large dinner party planning and execution, we’ll curate tuition according to your level and interests. We’ll call you back to talk through your requirements prior to the first session.

  • In every session you will create some tasty, nutritious food to take away. The sessions include:

    Basic knife skills

    How to create a balanced meal

    Taste and flavour - how and when to season with salt, pepper, herbs and spices

    Simple frying, roasting and braising techniques

    One-pot dishes.

  • Learn the basics with a 3-hour course to master the basics:

    Knife skills

    Ragu - make a super-versatile base and learn how to convert it into Bolognese, fabada, parmigiana and chilli

    Eggs - boiled, fried, poached, scrambled, omelette, pancakes

    Curry or stir-fry

    Flatbread

    Sweet treats

  • Mise en place

    Large group and celebration cooking

    Advanced knife skills including shellfish, fish and and meat butchery

    Flavour - how to adjust dishes with salt, fat and acid, when to go low and slow, and when to crank it up!

    Timings for multi-component meals

  • Each session will be centred on creating a multi-component dish prepared and served to restaurant standard. Session content may include:

    Sous vide

    Low and slow BBQ and smoking (double session required)

    Outdoor and live fire cooking including brining, smoking, rubs and glazes

    Advanced molecular gastronomy including fluid gels, edible glass, reverse spherification, foams and complex sauces

    Planning and executing multi-component multi-course events is also an option at this level.

    Note - this level assumes high levels of confidence and competence.
