Starters:

7. Oysters All Ways - straight up / classic shallot, red wine vinegar and Tobasco, roasted with lamb fat and confit garlic, Rockefeller - you choose! Served with Guinness.

8. Beetroot and Goat's Cheese Salad - Roasted beetroot paired with creamy goat's cheese, walnut, and a honey-mustard vinaigrette.

Mains:

1. Beef and Guinness Stew - Slow-cooked beef stew with carrots, onions, and potatoes in a rich Guinness gravy.

2. Irish Lamb Stew - Tender lamb simmered with root vegetables, warming spice, potatoes in a hearty wine broth, finished with fresh herbs and lemon.

3. Whole side of salmon - Hot-smoked over beech-wood at your property, served with a dill cream sauce, and steamed vegetables.

4. Shepherd’s Pie - Traditional casserole of savoury minced lamb topped with creamy mashed potatoes and baked until golden.

5. Boxty with Mushroom Cream - Irish potato pancake served with sautéed mushrooms in a white wine cream sauce.

6. Bacon and Cabbage - A beloved Irish favourite - tender Irish bacon served with buttered cabbage, parsley sauce, and champ (mashed potatoes with scallions).

7. Vegetable and Barley Stew - A hearty stew of root vegetables, pearl barley, and a medley of herbs.

8. Hake with Lemon and Butter Sauce - poached hake fillet served on a a bed of buttery leeks and lentils.

Desserts:

1. Sticky Toffee Pudding - Warm date pudding drizzled with toffee sauce and served with mascarpone ice cream.

2. Apple Tart - Simple - apples, tart - served with cream.

3. Baileys Cheesecake - Silky cheesecake infused with Baileys Irish Cream on a crunchy biscuit base.

4. Rhubarb Crumble - Tart rhubarb, with pear, orange and ginger topped with an crunchy buttery oat crumble. (Seasonal - can be substituted for apple).

5. Cranachan with an Irish Twist - A mix of oats, honey, cream, and Irish whiskey, layered with fresh raspberries for a Celtic-inspired treat.

6. Barmbrack Bread Pudding - Irish fruit loaf transformed into a decadent bread pudding with a whiskey custard sauce.

7. Fried fruit cake - sticky, butter-fried whisky and rum infused fruit cake, flamed with brandy and served with Cointreau cream.
