SCOTTISH SHOWCASE

Starters:

1. Cullen Skink - Traditional Scottish smoked haddock soup with potatoes, leeks, and cream, served with oatcakes.

2. Haggis Bon Bons - Crispy fried balls of haggis served with a whisky and mustard dipping sauce.

3. Cock-a-Leekie Soup - Classic broth of chicken, leeks, and prunes with a hint of barley, served with crusty bread (can be made with veggie stock too).

4. Beech-Smoked Salmon - Thinly sliced salmon cured served with pickled cucumber, horseradish cream, and oatcakes.

5. Neeps and Tattie Croquettes - Golden croquettes of mashed turnips and potatoes, served with a thyme cream sauce.

6. Smoked Mackerel Pâté - blended with crème fraiche, capers, dill, horseradish and lemon, served with toasted sourdough.

7. Mushroom and Thyme Soup - Earthy soup made with a hint of garlic and thyme.

Mains:

1. Haggis, Neeps, and Tatties - A classic Scottish dish featuring traditional haggis (veggie option available), mashed turnips, and potatoes, served with a whisky cream sauce.

2. Venison Loin with Cranberry Jus - Tender venison loin cooked to perfection, served with parsnip purée, wilted greens, and a cranberry and red wine jus.

3. Salmon Pie - Scottish salmon fillet in a creamy leek sauce, finished with dill and lemon, topped with puff pastry.

4. Braised Lamb Shank - Slow-cooked lamb shank in a rich wine (or whisky) and herb gravy, served with clapshot (potato and turnip mash).

5. Cranachan-Inspired Nut Roast (Vegan) - A plant-based nut roast flavoured with oats, whisky, and herbs, served with roasted root vegetables and red wine gravy.

6. Beef Stovies - Slow-cooked stew with onions, potatoes and carrots, with beef and corned beef.

7. Herb-Crusted Cod - prime cod fillet baked with a herb breadcrumb crust, served with buttery mash and a caper beurre blanc.

8. Braised Pheasant - Locally sourced pheasant, cooked in wine, served with game-fat roasties, a rich redcurrant jus, and roasted parsnips. (Note there will be shot within the pheasant.)

Desserts

1. Cranachan - A traditional Scottish dessert made with layers of whisky-soaked toasted oats, raspberry compote, honey, and cream.

2. Clootie Dumpling - A steamed spiced fruit pudding served with a rich whisky custard.

3. Tipsy Laird - Scottish trifle with whisky-soaked sponge, raspberries, custard, and whipped cream.

4. Sticky Toffee Pudding - Warm date sponge drenched in a toffee sauce.

5. Hazelnut Meringue Gateau - with raspberry cream and lemony raspberry coulis.
