MIDDLE EAST TAPAS MENU

This menu is great for informal sharing plates or a grazing style buffet. Tapas grazing and sharing menu:

1. Grilled Lamb Kebap - with Turkish spice and red pepper paste, cooked over a charcoal grill

2. Etli Kuru Fasulye - slow cooked lamb and white bean stew with smoky warming spices, finished with coriander and lemon.

3. Falafel - Fried patties with chickpeas and fresh herbs.

4. Crunchy slaw - Red cabbage, carrot and onion with mustard vinaigrette.

5. Hummus - Smooth and silky with garlic, lemon and sesame, finished with whole chickpeas.

6. Baba Ghanoush - Sumptuous chargrilled aubergine dip.

7. Labneh - Tangy yoghurt, strained through muslin over 24 hours to remove the whey.

8. Manakish - Selection of herbed and spiced sourdough flatbreads, eg thyme / olive and cardamom - cooked onsite over charcoal grill.

9. Mfarakeh - Potato, egg, cumin, coriander.

To finish:

Pistachio and Orange Cake - with cardamom and white chocolate cream.
