BBQ Meats:

1. Hickory Smoked Brisket (18 hours)

2. Oak Smoked Short Ribs (10 hours)

3. Cherry and Plum Smoked Baby Back Ribs (8 hours)

4. Apple and maple smoked pork shoulder (15 hours)

(Above prepared offsite, finished at venue)

5. Lamb Navarin (Slow cooked stew in a Dutch oven over charcoal in a fire pit - garlic, onion, potatoes, wine and smoked spices, finished with fresh herbs and lemon.

7. Burgers - home made, simple, options for fried mushrooms and onions - served on brioche buns.

8. Bourbon Street Blues Burger - Inspired by a trip New Orleans, Cajun rub, blue cheese, smoked streaky bacon, onion, mushrooms, served on a brioche bun - it's a five napkin affair!

9. Asado - whole lamb cooked next to fire on an iron cross - whole day cook required - great show-piece for larger events.

BBQ Fish:

6. Beech-Smoked Whole Salmon - prepared and hot-smoked at venue.

7. Alder and apple smoked mackerel - side or block fillets smoked at venue.

8. Whole brill / bass - Grilled or steamed, served with with onion and fresh herbs.

9. Sardines - Grilled whole, to eat off the bone - messy but delicious.

10. Langoustine / Prawns - Grilled and served with garlic butter.

11. Scallops - Cooked and served in shell, grilled with confit garlic / lamb fat / whisky.

BBQ Sides:

Creamed Corn - grilled corn, finished with cream, cheese and mustard.

Grilled corn - cooked on the grill - served with butter and a finishing rub.

Apple sauce - perfect with the pork options, Bramleys with clove, anise and cinnamon.

Hasselbacks - roasted and ridged herby potatoes, great for soaking up sauce.

Parmentier or roasties - crunchy on the outside, soft in the middle - done in dripping by default but can be vegan too.

New potatoes - boiled and lightly tossed in olive oil and mint.

House slaw - crunchy red cabbage, red onion and carrot with a mustard vinaigrette.

BBQ sauce - my home-made multi-layered sauce with with 20 ingredients - great with everything.

Homemade enriched sourdough flatbreads with selection of butters.

Brioche / white bread buns.

Haloumi - Grilled.

Afters:

Marshmallows (for kids and big kids) - skewers and fire provided.

Cranachan (toasted oats, cream and whisky with homemade shortbread).

Hazelnut meringue with raspberry cream, tangy lemon drizzle.

Grilled pineapple with rum sauce and mascarpone ice cream.

Fresh / baked cheesecake with request choice of topping.
